Gary’s Power Breakfast
Ingredients:
1 large head of broccoli (including peeled stems), chopped into bite-sized pieces
1/2 head of cauliflower, chopped into bite-sized pieces
1 package of tempeh (or 1 can black beans, drained and rinsed)
1 tablespoon fresh grated ginger
1 clove garlic, minced
2 tablespoons lime juice
1 teaspoon mustard seeds (or 1 teaspoon mustard)
Dash of cumin (or any spices you like)
Toppings: Bitchin Sauce, plant-based yogurt, or Trader Joe’s Kale Pesto
Method:
Steam the vegetables: Add the chopped broccoli and cauliflower to a large frying pan with about 1/2 inch of water. Cover and steam over medium heat for about 3–5 minutes until they start to soften.
Prepare the tempeh or beans: If using tempeh, crumble it with your hands or chop it into small pieces. If using black beans, drain and rinse them. Add the tempeh or beans to the pan with the vegetables.
Add the seasonings: Stir in the grated ginger, minced garlic, lime juice, mustard seeds (or mustard), cumin, and any other spices you like. Stir well to combine.
Cook and soften: Cover the pan again and cook for another 5–7 minutes, or until the vegetables reach your desired level of tenderness. Stir occasionally, and add a little more water if needed to prevent sticking.
Serve: Remove from heat and serve with a generous helping of your favorite topping (Bitchin Sauce, plant-based yogurt, or Trader Joe’s Kale Pesto) on top.
