Mike’s Chickpea Salad Sandwich
Ingredients:
1 can chickpeas (15 oz), drained
2 tbsp vegan mayonnaise
1 tbsp Dijon mustard
1 tbsp lemon juice
1 celery stalk, finely chopped
1 small red onion, finely chopped
1 small carrot, grated
1 dill pickle, finely chopped
2 tbsp fresh parsley, chopped
Salt and pepper, to taste
4 slices of whole-grain bread (toasted, if desired)
Lettuce leaves
Sliced tomato (optional)
Optional: A pinch of garlic powder or smoked paprika (for added flavor)
Method:
Prepare Chickpeas: In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
Mix Dressing: In a small bowl, combine the vegan mayonnaise, Dijon mustard, and lemon juice. Mix until smooth and well-combined.
Combine Ingredients: Add the chopped celery, red onion, grated carrot, dill pickle, and parsley to the mashed chickpeas. Pour the dressing over the mixture and stir until everything is evenly coated. Season with salt, pepper, and optional garlic powder or smoked paprika, to taste.
Assemble Sandwiches: Lay out the bread slices (toasted if you prefer). Spread the chickpea salad evenly on two slices of bread. Top with lettuce leaves and tomato slices, if using. Close the sandwiches with the remaining slices of bread.
