Marc’s Meal Plan for a Long, Healthy, and Vibrant Life
Breakfast: Usually a large bowl of fruit, toasted bread or a bagel with some sort of nut butter and preserves, a large glass of fresh orange juice, a cup of green tea, and sometimes a cup of pretty strong black coffee.
Lunch and Dinner: A large lunch after a long ride usually means a smaller dinner but always a dessert. These include some combination of avocado toast with vegenaise and sliced jalapeño peppers, sesame tofu, hummus, a bowl of pasta with olive oil, garlic, and some sort of chili, a salad with arugula, tomatoes, carrots, red cabbage, and other assorted veggies. I'm also hooked on french fries and onion rings.
Dessert is special with lots of different sorts of berries, sliced apples, vegan chocolate chip cookies and dark chocolate, and whatever else is around.
