Dr. Batiste’s Cajun Style Tofu Crumbles

Servings: 6

Ingredients:

  • 1 package extra-firm tofu

  • 1 small red onion, finely chopped

  • 2 garlic cloves, minced

  • 1 small bell pepper, finely chopped

  • 1 serrano pepper, finely chopped (or 1 tsp cayenne, for heat)

  • 1 tablespoon parsley, chopped

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried oregano

  • Salt and pepper, to taste

Method:

  1. Prepare the Tofu: Press the tofu to drain as much liquid as possible. Once pressed, break the tofu into small crumbles.

  2. Combine Ingredients: In a large mixing bowl, combine the tofu crumbles, chopped red onion, garlic, bell pepper, serrano pepper, parsley, and all seasonings (onion powder, garlic powder, paprika, thyme, oregano, salt, and pepper). Mix well to coat the tofu evenly with the spices. Marinate for at least 30 minutes, or for best results, marinate overnight.

  3. Bake the Tofu: Preheat the oven to 375°F (190°C). Spread the marinated tofu crumbles evenly on a non-stick baking sheet. Bake for 1 hour, turning the tofu every 15 minutes to ensure even crisping, or until the crumbles reach your desired level of crispiness.

  4. Store: Remove from the oven and let cool. Transfer the crumbles to a glass storage container.
